Die moderne Dauerausstellung vermittelt Informationen zur Kulturgeschichte des Getreides und seiner Bedeutung als Grundnahrungsmittel. Sie zeigt die weltweite Verehrung von Korn, geht zurück zu den Wurzeln des Getreideanbaus, schaut aber auch heutigen Bauern über die Schultern. Sie lässt Diskussionen über verschiedene Methoden in der Saatgutzüchtung aufleben und zeigt die Schlüsselfunktion von Genbanken.

Die vergleichende Anatomie mit echten Skeletten von Tieren und Menschen bildet das Bindeglied zwischen Urzeit und Gegenwart.
